I would categorize castles as a fortified residence, predominantly for a feudal lord to control certain area of land adjacent to it, exclusively through military means.

This alone disqualifies virtually every Chinese castle, because of the lack of feudal lords.
Chinese castles can also be fortified residences, built against bandits by family clans.

Which is especially prevalent during times of turbulence, when central government were too busy fighting rebellions or invasions.
